What is simit katmer?

Katmer is one of Gaziantep's best-known desserts. The dough is rolled out paper-thin, kaymak and pistachios are placed inside, and it is folded and baked.

The simit in its name is what people in Antep call finely ground pistachios; simit katmer is katmer made with them.

The sign of a good katmer is dough that is layered and crisp, with the kaymak inside staying soft. Once baked, it is sliced and served.

When is katmer eaten?

In Gaziantep, katmer is traditionally eaten at breakfast. At Lezzet-i Şark Gusto it is on the dessert menu and comes hot at the end of the meal.

Whether at breakfast or as dessert, it is eaten hot; as it cools, the kaymak firms up and the dough loses its crispness.

The difference between simit katmer and katmer

The Lezzet-i Şark Gusto menu has two options: simit katmer and katmer. Both are for one or two people; in simit katmer the finely ground Antep pistachios stand out. Either is a good size for two people sharing a dessert.
