What is künefe?

Künefe is one of the most loved hot desserts of southern Türkiye's cuisine, above all in Hatay and Gaziantep. The shredded kadayıf turns crisp in butter, the cheese inside melts and meets the syrup.

The sign of a good künefe is cheese that stretches when you lift it with a fork and a golden, crisp kadayıf underneath. Künefe is usually baked in metal trays, and the crisp crust that forms on the bottom is the most loved part of the dessert.

How is künefe eaten?

Künefe is eaten hot, straight from the heat; the cheese hardens as it cools. The ground pistachios sprinkled on top add both color and flavor. Tea or Turkish coffee goes well with it.

How many people is a künefe for?

On the Lezzet-i Şark Gusto menu, künefe comes in three sizes: a single portion, a medium size for two or three people and a large size for four or five. The medium and large sizes suit sharing at a full table. The menu also has paşa künefe.

At a large table, ordering a medium or large künefe for the middle lets everyone have a taste.

Questions

Frequently asked

Which cheese is used in künefe?

Künefe uses an unsalted cheese that melts and stretches when heated.

Is künefe eaten hot or cold?

Künefe is eaten hot. The first minutes, while the cheese is melted and the kadayıf is crisp, are its best moment.

Can I order künefe to take away?

Yes, Lezzet-i Şark Gusto offers takeaway. Since künefe is a dessert to eat hot, we recommend trying it at the restaurant, fresh from the heat, if you can.

Where is künefe from?

Künefe is made in Gaziantep too, but the registered künefe is Hatay's Antakya Künefesi: it was registered with the Turkish Patent and Trademark Office under no. 101 on September 5, 2008.
