What is lamb tandır?
Tandır, cooking in an underground pit or a closed oven, is one of the oldest cooking methods in Anatolia. In lamb tandır the meat cooks not over direct fire but in the heat of a closed space, so it keeps its juices.
The result is meat that softens, comes away easily from the bone and takes its flavor from its own fat.
Which cut is lamb tandır made from?
Lamb tandır is usually made with bone-in cuts such as the shoulder, leg or shank. The bone gives flavor to the meat as it cooks, and the long, slow cooking softens the connective tissue.
The cooked meat falls apart easily with a fork, so lamb tandır hardly needs a knife.
What to eat with lamb tandır?
Lamb tandır is filling on its own. From the Lezzet-i Şark Gusto menu, roasted onion and garlic, shepherd's salad and an ayran or şalgam balance the richness of the meat.
Afterwards, künefe or katmer closes a filling meal with a warm dessert.
Questions
Frequently asked
Is lamb tandır cooked in an oven?
Traditional tandır is made in ovens set into the ground. Today it is cooked the same way in closed ovens, slowly and in its own juices.
Why is the meat of lamb tandır so tender?
The meat cooks slowly in a closed space, not over high heat. It keeps its juices, the connective tissue breaks down and the meat comes away easily from the bone.
